Celebrate National Lasagna Day with Cardona's Italian Market

The History of Lasagna, from Ancient Rome to America
The classic Italian dish, Lasagna, has a rich history, evolving from ancient Roman dishes to the more modern-style lasagna we know (and love) today. Its recipe roots can be traced back to ancient Greece and Rome, with the Greek word "laganon" (meaning flat pasta) thought to be the origin of the name. The dish's popularity grew in Italy during the Middle Ages, particularly in Naples. This is where the first lasagna recipe was recorded in the 14th-century “Liber de Coquina” cookbook.
Since then, other countries created their own take on the classic dish, using regional cooking styles and ingredients to enhance the recipe.
In France, during the 16th century, béchamel sauce was introduced as a key ingredient in the recipe. This significantly enhanced the texture and flavor of the dish.
Then in the mid-20th century, Italian immigrants brought their own recipe variations to America, including new ingredients like tomato sauce and ricotta cheese. This led to the widespread popularity of lasagna becoming one of the most popular Italian-American dishes in the country.
